The enrichment used in enriched wheat flour products consists of a blend of B vitamins, reduced iron, and folic acid. The blend consists of Wheat Starch, Niacin (Vitamin B3), Reduced Iron, Thiamin Mononitrate (Vitamin B1), Riboflavin (Vitamin B2), and Folic Acid. Enrichment is mandatory for all wheat flour being shipped to Canada. Enrichment does not change the functional characteristics of the flour. Like our flour, all of our additives are Kosher certified.
Malted Barley Flour is used in some wheat flour products to alter the alpha amylase activity in the flour, as indicated by the falling number test. Malt is commonly used in bread flours. Like our flour, all of our additives are Kosher certified.
Chlorine is used as a bleaching agent in wheat flour. Chlorine whitens the flour and also alters the pH value of the flour. Normal pH value of unbleached wheat flour is 6.0 – 6.7. Chlorine can be used to adjust the flour’s pH anywhere from 3.9 to 5.9. Chlorine is commonly used in traditional cake flours and some pastry flours. Like our flour, all of our additives are Kosher certified.
Benzoyl peroxide is used as a bleaching agent in wheat flour. Benzoyl peroxide differs from chlorine in that it only whitens the flour; it does not affect pH whatsoever. Used in any flour application where a bright white color is important to the finished product. Like our flour, all of our additives are Kosher certified.
